Tortellante: a truly Italian initiative by an American, Lara Gilmore the wife of Massimo Bottura. The idea was to borrow the precision of autistic children and put them to work making tortellini, the flagship of Italian cuisine. Giving dignity and a role back to people with disabilities in a bright environment and in close contact with housewives and master pasta makers. The products, of high quality, are normally sold in commercial circuits and help pay for the services these special children need and to alleviate the support given to them by their families. A study by a Dutch company (Elsevier) carried out on twenty participants in the project found an undoubted improvement that this type of experience brought about in the quality of life and active social integration of the children.
